Pork Secreto w/ Chorizo spice

Secreto is a classic Spanish butchers' cut from one of two areas on the pig; ours is coming from the jowl. It is marinated in a paprika-forward spice blend most often associated with a traditional chorizo sausage, before being grilled to order and served alongside an apple cider glaze.
